Cast Iron Coq au Vin
Few dishes feel more at home in a cast iron pot than a properly made coq au vin. The heavy pan holds heat evenly — it does not rush, it does not panic — and that steady, unhurried warmth is exactly what this dish requires. The smell of it filling a cold cabin is, frankly, half the reason to make it at all.

- 500ml good chicken stock
- 3 tbsp all-purpose flour
- 2 tbsp unsalted butter

- Salt and coarse black pepper
- Fresh parsley, chopped, to finish
How to Make It
- Season chicken generously on all sides with salt and pepper. Do not be timid. Under-seasoned food is one of the great avoidable sorrows.
- In your cast iron over medium-high heat, render lardons until golden and crisp. Remove and set aside, leaving fat in the pan.
- Working in batches — never crowd the pan, it causes steaming instead of browning — sear chicken pieces 4 minutes per side until deeply golden.
- Remove chicken. Add butter, sauté onions and mushrooms until golden. Add garlic, cook one minute more.
- Dust everything with flour, stir to coat. Add tomato paste, cook 2 minutes stirring constantly.
- Return chicken and lardons. Pour over wine and stock. Add herbs. Bring to a boil, then reduce to a slow, comfortable simmer.
- Cover and cook 1 hour 15 minutes, turning chicken once at the halfway point.
- Adjust seasoning, remove herb sprigs. Serve in warmed bowls with crusty bread or mashed potatoes.

Skillet Tarte Tatin
The tarte Tatin was, famously, an accident — or so the story goes. The Tatin sisters, proprietors of a hotel in the Loire Valley, supposedly invented it by mistake sometime in the 1880s, though food historians debate the precise details with great energy and no visible sign of resolution.
What is not debatable is the result: caramelized apples, sticky and soft, atop a buttery pastry crust, presented upside-down so that the dark caramel runs down the sides. This is the sort of dessert that makes people go quiet at the table. The good kind of quiet.
What You'll Need
- 1.2kg firm apples (Granny Smith or Braeburn)
- 150g caster sugar
- 80g unsalted butter, cubed
- 1 vanilla pod, seeds scraped
- Pinch of fleur de sel
- ½ tsp ground cinnamon
- 1 sheet all-butter puff pastry (320g)
- Crème fraîche or vanilla ice cream to serve
How to Make It
- Peel, core, quarter apples. Toss with half the sugar, rest 20 minutes, drain well. Excess moisture is the enemy of good caramel.
- In a 24cm ovenproof skillet, melt butter over medium heat. Add remaining sugar; cook without stirring until deep amber, about 10–12 minutes.
- Off heat. Add vanilla and salt. Pack apple quarters tightly in concentric circles — they shrink during cooking, so crowd them in.
- Return to medium heat, cook apples 15 minutes until softened. Remove and cool slightly.
- Preheat oven to 200°C. Drape pastry over apples, tuck edges around the fruit.
- Bake 25–30 minutes until pastry is deep golden. Cool 10 minutes — not longer, or caramel sets — then invert onto a plate with confidence and commitment.
The Philosophy of Salt
